BASE: Cream butter and sugar. Add egg yolk and mix well. Add milk, flour and salt. Line a greased lamington tin with the pastry. Spread pastry with raspberry jam. Sprinkle topping evenly.

Bake in a moderate oven (180 - 200 C) for 20 minutes.

|
|
TOPPING: Beat egg white slightly and gradually add sugar. Mix in coconut.
|
|
|
When cool cut into slices or squares.
