Cut boneless chicken breast into nugget or strips. Mix egg and milk in shallow dish. (I shake them to mix them well). Mix bread crumbs seasoning and sorn meal in another bowl (I use a shallow tupperware dish so I can shale the chicken in it)

Pour oil into 13 x 9 inch pan and spread evenly. Drop chicken into milk mixture, then place several pieces in crumb mixture and shake to coat. Place chicken in single layer in baking pan. (You may need two pans. Chicken should not be overlapping in pan.)

Bake for 30 - 40 minutes at 350 degrees. For crispier chicken, turn pieces over half way through baking.

For Parmesan chicken, substitute Italian bread crumbs for plain, parmesan cheese for corn meal, and 1 Tablespoon Italian seasoning for one of the Tablespoons of chicken seasoning. Serve with spagetti and marinara sauce of your choice.

Can be frozen for and heated in oven until warm. Great for a quick meal for the kids.
