1/2 cup vegetable oil
|

1 potato, peeled and cut into 1/4 inch dice
|

6 eggs, beaten
|
|
Salt and pepper to taste

8 flour tortillas, warmed
|

Instructions |

|
Heat the oil in a large skillet over medium heat. Add the potato and cook, stirring occassionally, until golden brown about 5 minutes
|

Pour off all but 1 tablespoon of the oil from the pan and add the eggs. Season with salt and pepper and scramble the eggs, 2-3 minutes
|
|
|
Scoop the eggs onto one side of each tortillas, dividing them evenly. Fold over, and enjoy.
