2 large avocados, peeled and pitted
|
|
3/4 cup reduced sodium chicken broth
|
|
1/4 cup light sour cream
|
|
1 can condensed tomato soup (10 3/4 oz)
|
|
3/4 cup nonfat buttermilk
|
|
1/4 cup chopped cucumber
|
|
1/4 cup chopped fresh tomatoes
|
|
2 tbsp chopped fresh basil
|
|
1 tbsp red wine vinegar
|

Instructions |

|
In a medium bowl, mash avocados. Add broth and sour cream, stirring until smooth. Set aside.
|

In another medium bowl, stir together soup and buttermilk until smooth. Set aside.
|

In a small bowl, combine cucumber, tomatoes, basil and vinegar.
|
|
|
Sppon avocado mixture into 4 stemless wineglasses. Top with tomato soup mixture. Arrange cucumber-tomato mixture in center of soup.
