Soak tapioca 24 hours in 1 cup milk, drain, using 2 quart double boiler pan,
add 2 cups milk, tapioca, eggs, salt and sugar, cook for 15-20 minutes stirring constantly.
Remove from heat, add vanilla.
Cool 10 minutes and chill.
Chocolate Tapioca-
Pepare tapioca pudding as directed above, while still warm fold in 1/2 cup chocolate chips (unsweetened)
Pineapple Fantasy-
Prepare tapioca as directed above, let chill and fold in, 3/4 cup whipped cream and 1/2 cup drained crushed pineapple.
Pour into serving dishes and garnish with cherries or pinapple slices.
