2 boneless skinless chicken breasts (sliced into thin strips)
2 cups Captain Crunch cereal
1/2 cup Cornflakes
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1 beaten egg
1 cup milk
2 tbls dijon mustard
3 tbls mayo
1 tsp yellow mustard
1 tsp creamy horseradish
1 tsp honey
Instructions
Heat a fryer or pan with oil to 375 degrees. Smash Captain Crunch and Cornflakes into crumbs. Add onion powder, garlic powder and salt.
In a separate bowl, combine the egg and milk. Dip each piece of chicken into the milk mixture, then into the cereal mixture. Fry the chicken for 4-6 minutes until dark golden brown. Drain on paper towels.
For the sauce, combine dijon mustard, mayo, yellow mustard, horseradish and honey. Mix well and refrigerate until ready to serve.
