8 6in flour tortillas

3/4c shredded Jack or pepper jack cheese

Instructions |

|
Mix salsa, beans, zucchini. Spreaed 1/4 mix over 4 tortillas. Top each portion with 3T cheese. Cover with another tortilla.

Heat nonstick sillet over med heat. One at a tie, carefully cook each quesadilla, turning once, until cheese is melted. Cut and serve.
