Combine flour, baking powder and salt. Cut in shortening. Add milk, stir quickly until dough clings together. Turn out onto floured board. Knead dough several times, then roll to fit 9in pie pan.

Line pie pan with dough. Cut tomatoes into thick slices. Cover dought with layers of tomatoes. Sprinkle with salt, pepper and basil. Blend cheese and mayo, spread over tomatoes. Bake at 400 for 15min then reduce heat to 350 and continue to bake another 20min or until crust is browned.
