1 small onion, grated and juice squeezed out, or 1/4 cup dehydrated minced onion
1 teaspoon crushed or minced garlic
1/2 package seekh kabob spice mix, Ronaq or National brand, in Indian groceries
2 eggs
1 cup soft bread crumbs
1 teaspoon salt, few grinds of black pepper
Sauce for Sliders
1/3 cup mayo and 1/3 cup plain greek yogurt
1/2 cup chopped cilantro
1/2 clove garlic, sliced or crushed
1 teaspoon lemon juice
dash of red cayenne pepper
salt and pepper to taste
Small potato rolls or slider buns
sliced red onion, lettuce, thinly sliced tomato for garnish
Instructions
Note- may substitute spice mix for kebobs from desktop cookbook for commercial spice
mix. Mix meats, spices, bread crumbs, egg, garlic and onion, salt and pepper. Shape
into 2 1/2 inch patties, using about 1/4 cup of meat mixture for each.
Mix mayo, garlic, lemon juice, red pepper and cilantro in blender or food processor and
process until smooth and creamy, and pale green. Then stir in the yogurt by hand. Salt and
pepper to taste.
Grill or broil meat patties for 4 minutes the first side, three minutes on the second side
so they stay juicy. Split and toast the buns/rolls. Spread with cilantro mayo, put lettuce,
tomato, and onion on bun with meat patty. Serve hot.
Appetizer variation- Make the meat into little cigars (2 by 3/4 inches) and press 4 or 5
pine nuts into the top of each one. Or roll into little meatballs. Bake at 350 for 18
minutes. Serve with the cilantro mayo as a dipping sauce.

Make patties small for sliders or make full size as a main dish using hamburger buns.
