1/2 pouhd smoked sausage, cut into 1/2 inch slices
3/4 pound chicken thighs, cut into small bite sizepieces
1/2 cup fresh okra diced
1 cup chopped onion
1/2 cup chopped green pepper
3 cloves of garlic minced
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
1- 14.5 oz. can of diced tomatoes, undrained
1 cup medium sized shrimp cooked, peeled
1 1/2 cups uncooked regular long grain white rice
3 cups chicken broth
Instructions
In a small saucepan, combin e flour and oil. Mix well and over a medium heat stir constantly for 5 minutes.
Reduce heat to medium low and stir while cooking for another 10 minutes or until the mixture turns a light brown color.
In a crockpot pour in the flour and oil mixture. Stir in all the remaining ingredients except for srimp. rice, and broth. Cover and slow cook for about 7 hours.
Next, add shrimp to the Gumbo and cook on low for another 20 min. M.eanwhile, cook rice in broth according to directions on package. Serve Gumbo over rice
