1 cup prepared small SHRIMP (precooked, peeled, etc)
1 1/2 cup fresh BROCCOLI FLORETS - chopped small
1/3 cup CARROT - chopped
1/3 cup RED BELL PEPPER - chopped
1/3 cup ONION - chopped
2 TBL real BUTTER
2 teas OLIVE OIL
GARLIC POWDER (to taste)
SALT or SOY SAUCE (to taste)
Instructions
Chop and measure out vegetables.
Prepare rice per package directions. Meanwhile, add oil and half of butter to skillet, and cook all vegetables (somewhere between saute and stir-fry) to desired doneness (I like the broccoli and carrots to be firm but not crunchy)
When almost done add shrimp, remaining butter, and seasonings. Continue until shrimp is heated through. Serve shrimp/veg. mixture over rice.
