1/2 med. cucumber peeled, seeded, and finely diced
1/4 cup mayo
1/2 Tbs. fresh tarragon
2 small scallions, thinly sliced
Kosher or Sea salt
Freshly ground pepper
2-3 New England -style hot dog buns
2-3 Tbs. unsalted butter, softened
Pickles and chips as accompaniment
Instructions
Prepare the lobster salad;
If using a fresh lobster steam or biol them. Let cool to room temp. Use a cleaver to crack and remove meat from the claws, knuckles and tail. Remove the cartilage from the claws and the intestines from the tails of the cooked meat.Cut the meat into 1/2 inch dice.
Place the cucumber in a colander for at least 5 minutes to drain excess liquid.. combine the lobster, cucumber, mayo, and tarragon.Add the scallions and salt and pepper. Cover and chill 30 minutes to 1 hour.Lightly butter both sides of each bun.Toast the buns under a broiler or in a cast iron pan for about 2 minutes or until golden brown. Stuff each with chilled lobster salad---- Enjoy
