1 cup pineapple chunks, fresh or canned

1 and 1/2 cups papaya, cubed

1 cup mango, cubed

1 banana, sliced

1 cup strawberries, sliced or cut into quarters

1 cup dragon fruit (pitaya, pitajava), cubed

1 star fruit (carambola), sliced

1/4 cup coconut milk
|

1 Tbsp. freshly-squeezed lime juice

2 Tbsp. brown sugar OR palm sugar

Instructions |

|
To prepare the fruit salad dressing, stir coconut milk, lime juice, and sugar together in a cup until the sugar dissolves. Set aside.

Place all of the fruit in a mixing bowl.
|
|
|
Pour the dressing over the fruit, toss, and mix well.
|
|
|
Pour or scoop the fruit salad into a serving bowl, or into a prepared pineapple boat.

Suggestions |
|
Garnish just before serving with a star fruit slice. To keep star fruit from going brown after slicing, drizzle with fresh lime or lemon juice.
