preheat oven to 350. place uncut pumpkins in shallow dish and 1/4 in of water cover tightly with foil and bake for 40 minutes. Let cool reheat oven to 375. with paring knife remove tops from pumpkins and discard seeds, then sccop out flesh leaving 1/4 in shell.
place 4 cups of pumpkin flsh in mixing bowl. seperate eggs stirring yolks into bowl, and placing whites into seperate bowl for later. Stir flour and baking soda into pumpkin bowl , then stir in cheese.
Whip egg whites into stiff peaks. Fold into pumpkin mixture. Spoon souffle mixture into pumkin shells. Place on baking sheet and bake for 15 minutes.
