1 pound lean ground turkey

1 medium onion, chopped

2 garlic cloves, minced

3 cans (14-1/2 ounces each) reduced-sodium chicken broth

2 cans (15 ounces each) red beans rinsed and drained
|
|
2 cans (14-1/2 ounces each) Italian stewed tomatoes
|

2 teaspoons dried oregano
|
|
2 teaspoons dried basil
|
|
1 teaspoon pepper
|
|
|
|
1/2 teaspoon salt (or to taste)

|
1/4 teaspoon crushed red peppers

May also add carrots, zucchini, spniach, celery

Instructions |

In a large soup kettle cook the turkey (don't add oil), onions and garlic over medium heat until meat is no longer pink; drain
|

Stir in broth, beans, tomatoes, and seasonings. Bring to a boil
|

Reduce heat; simmer, uncovered for 10 minutes.
