1 small red bell pepper, cored, seeded and chopped
1 tablespoon chili powder
1 1/2 teaspoons groun cumin
2 teaspoons hot sauce
1 tablespoon Worcestershire sauce
1 cup tomato sauce (small can)
3 tablespoons dark brown sugar
10 ounces shredded cheddar cheese
3 scallions (green onions) chopped
Instructions
Preheat oven to 400 degrees. In large bowl mix corn muffin mix with eggs, melted butter and milk. Stir in the corn. Drizzle some EVOO into a large nonstick skillet with oven safe handle and spread around pan. Pour in batter and place the pan in the oven, baking unitl golden brown, about 12-15 minutes.
Place a skillet over medium high heat and add 2 tablesppons of EVOO. And the ground meat and brown, breaking up as cooks. Add garlic onion, bell peppers and season with salt and pper, chili powder, cumin and hot sauce. Cook for 5 minutes then add worcesershire, tomato sauce and brown sugare. Stir to combine and recude heat to low. Simmer until cornbread is ready.
Remove the cornbread from the oven and cover it with the slppy mixture, then sprinkle with cheese. Put pan back into the oven and cook for 5 minutes to set the topping and melt the cheese. Top with scallions and cut the pizza to serve.
