3/4 C. Choped Onion

1 Garlic Clove Minced

2. tbs Veg Oil

2 C. Chicken Broth

1 Can Stewed Tomatoes

2 tbs Minced Parsley
|
|
1/2 tsp Salt

|
1/4 tsp Dry Thyme

1/8 tsp cayanne pepper

1/8 tsp chili pepper
|
|
1/8 tsp black pepper
|

1 Bay Leaf
|
|
1 C. Long Grain Rice
|
|
1 lb. Medium Shrimp peeled and deveined

Instructions |

|
In large skillet cook Ham, Onion and garlic in oil until onion is tender.
|
|
|
Stir in Broth, tomatoes, parsley and seasonings. Bring to a boil.
|
|
|
Stir in Rice. Reduce heat, Cover and simmer for 15 to 20 Minutes or until rice is tender
|
|
|
Add shrimp. Cook 5 minutes or until shrimp is tender. Discard Bay Leaf and serve.
