Boil chicken with onion, celery, garlic, salt and pepper.
Debone, shred chicken.
Strain broth.
Return broth to pot adding shredded chicken, onion, carrots, celery, chives, scallions, lemon juice, garlic (all diced to you liking).
Simmer.
Near the end of cooking add basil, ginger, spinach and noodles.
You can delete any of the above items and add others of you own liking.
Notes-
Pamela - I have made and LOVE the basil, but not so much ginger.
