Fry bacon and cook hard boiled eggs. Prepare spinach.
Place spinach in large serving bowl. Top with eggs and 6 crumbled bacon strips.
Heat olive oil over medium heat. Stir in onion, garlic and mushrooms, cook until soft. Whisk in vinegar, mustard, honey and 2 crumbled bacon strips. Cook until hot.
Pour hot dressing over spinach, toss and serve.
