1 canned chipotle pepper in adobo sauce, finely chopped
1 can fire roasted diced tomatoes
2 cans no-salt-added beans, drained
¾ cup solid pack pumpkin
1 8-oz can no-salt-added tomato sauce
1 12-oz Mexican lager
¾ lb lean leftover roasted turkey
Instructions
Heat oil in a large pot. Add onion and peppers, and sauté until
onions begin to become translucent. Add the garlic and spices,
and sauté for an additional 30 seconds. Add remaining
ingredients except for the turkey, and bring to a slight boil.
Reduce heat, cover, and simmer for about 30 minutes. Add
turkey and cook until completely warmed.
