1/2c. plain yogurt, buttermilk, or milk mixed with 1/2 tsp vinegar
1/2-3/4c milk
1 egg, beaten
1 Tbsp canola oil
2 Tbsp packed brown sugar
1/2 tsp salt
dash of cinnamon
1 tsp baking powder
1 c. flour, preferably half whole wheat and half white
Instructions
In a medium bowl, combine the oats, yogurt, and milk. Set aside
for 15-20min to let the oatmeal soften.
Beat in the egg and oil, and mix well. Add the sugar, salt, and
cinnamon, then the baking powder and flour. Stir until moistened.
Let sit for 5 minutes.
Heat a lightly oiled skillet over medium high heat.
For each pancake pour about 1/4c. batter onto the griddle.
Turn when tops are covered with bubbles and edges look done.
