Place the onions into a 6-quart slow cooker.
Stir the coriander, if desired, cumin, cinnamon and garlic powder in a small bowl. Rub the mixture on the beef. Place the beef into the cooker. Arrange the apricots around the beef.
Stir the stock and honey in a small bowl. Pour over the beef. Cover and cook on LOW for 7 to 8 hours or until the beef is fork-tender.
Time-Saving- The recipe may also be cooked on HIGH for 4 to 5 hours.
