Heat Seasoned Pork per instructions, drain. Simmer for 30 minutes
Simmer for 30 minutes. Assemble in 4 steam table pans-Listed from bottom to the top.
2 cups of sauce, 8 tortillas, 1 1/8 lbs. of shredded pork, 1/4 lb. of shredded cheese, and then repat and additional layer, followed by 2 more cups of enchilada sauce and topped with the remaining shredded cheese.
Heat at 350 degrees for 25 minutes until cheese is melted. Cut into 24 squares.
