Chicken with Green Olives and Tomatoes

1 Tbsp butter
|
|
4 boneless chicken breasts
|
|
1/2 cup red pimento-stuffed green olives
|
|
1 thickly sliced zucchini
|
|
3 garlic cloves, minced (or 1 tsp garlic powder)
|
|
1 pint cherry tomatoes (or 2 coarsely chopped tomatoes)
|
|
1 tsp paprika
|
|
1 tsp dried oregano
|
|
salt and pepper
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

|
|
|
|

Instructions |

|
Melt butter in large frying pan over medium heat. Add chicken. Cook until golden, 3 to 4 minutes per side. Meanwhile, slice zucchini.

Scatter olives, zucchini, garlic and tomatoes around chicken. Sprinkle with seasonings and pinches of salt and pepper. Cover and reduce heat to low.
|
|
|
Cook chicken and veggies covered for 10 to 20 minutes, until chicken it cooked through.
|
|
|
Serve with rice or noodle.
