Defrost Pork in Refrigerator. On day of service put gordita bread in warmer.

Dice Pork in uniform pieces. PUt in Microwave pan of appropriate size. Refrigerate.

|
Chop Cilantro. Add Ciltantro, seasonings, and juice to Pork. MIcrowave on high intil Temp is 165F.
|

|
Put 2 oz.( weight) of the pork on each gordita. Wrap in paper slips included in the case of gordita bread. Offer 1/4 cup. shredded Lettuce, diced tomatoe chopped cilantro and lime juice as garnish. Offer 1 oz of ranch dressing or 1/4 cup commodity salas as a choice
