Combine yeast and flour. To the water add sugar, shortening and salt and heat until till warm.

Add to dry mixture 2 egg whites. Beat at low speed with mixer for 1/2 minute then beat at high speed for 3 minutes.

By hand stir in sifted flour to make a soft dough. Knead for 10 minutes. Put grease into bowl and let rise for 50 to 60 minutes. Punch down and rest another 10 minutes.

Divide dough into 20 to 24 balls. Place on greased sheet and make a slit in the top of each ball. cover and let rise for 30 to 40 minutes. Fill pan of hot water underneath rolls and bake at 450 for 10 to 12 minutes.
