Cut vegetables in small bite-size pieces. Put all vegetables except Tomatoes in pot. You can just cover with water or add 3-1/2 to 4 C of water. Boil fast for 10 minutes. Cut heat down and simmer for approximately 30 minutes until veggies are tender. Add Tomatoes along with juice. Bring to boil and heat thoroughly. Add soup mix and simmer for 10 minutes. May be seasoned with Salt, Pepper, Parsley, Curry, Oregano, Basil and Thyme to taste (add extra Cabbage and Tomatoes if desired).
