1 Yellow, Green, Or Red Sweet Pepper Cut Into Strips
4 Cloves of Garlic, Minced
12 Drumsticks, Skinned
1/2 Cup Chicken Broth
1/4 Cup White Wine
2 Tbsp Quick-Cooking Tappioca
2 Bay Leaves
1 Tsp Dried Oregano
1 Tsp Sugar
1/2 Tsp Salt
1/4 Tsp Black Pepper
1 14.5 Oz. Can Diced Tomatoes, Undrained
1/3 Cup Tomato Paste
Hot Cooked Pasta or Rice
Instructions
In a slow cooker, combine mushrooms, celery, carrots, onions, sweet pepper, and garlic. Place chicken drumsticks on vegetables. Add broth, wine, tappioca, bay leaves, oregano, sugar, salt, and pepper.
Cover and cook on LOW setting for 6-7 hours or on HIGH Setting 3 to 3 1/2 Hours.
Remove chicken and keep warm. Discard bay leaves. If using LOW setting, turn to HIGH setting. Stir in tomato paste and undrained tomatoes. Cover and cook for 15 minutes more. To serve, spoon vegetable mixture over chicken and pasta.
