Using a heavy pot, dissolve sugar in with water over medium high heat. Bring to a full boil for 10 minutes stirring constantly.

Mash bananas in a food processor and add spices until thoroughly blended.
|
|
|
Blend in lemon juice and zest to sugar mixture.
Add banana spice mix to sugar mixture and stir until thoroughly mixed in.
Add Vanilla and mix.

Cook over medium low heat, stirring occasionally for approx. 45 minutes. In the last 10 minutes or so add the Banana Rum.
Ladle into clean jam jars, leave 1/2 from top, place lids tightly and flip for 24 hours to seal. You can also freeze or use a waterbath.
