1 pound shrimp, deveined and shelled
|
|
1 2/3 cups lime juice (about 5 large limes)
|
|
1 small onion (white)
|
|
3 roma tomatoes
|
|
1 tsp. cilantro
|
|
1 jalapeno
|
|
1 Tbsp. EVOO
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

|
|
|
|
|

Instructions |
|
|
In a medium bowl, toss the shrimp and 1 cup of the lime juice.
Cover and Refrigerate for at least 2 hours, or until shrimp are cooked
|

In another bowl, add the chopped tomatoes, onion, cilantro, and jalapeno.
Add the EVOO, salt and pepper (to taste)
|
|
|
Add the shrimp.
Serve with corn torilla chips.
