Remove tops of asparagus and quickly fry in a little butter (2-3 min), then reserve for garnish.
Melt butter in pot, add onions, garlic, celery and asparagus. Cover and sweat for 10-15 minutes at med-low temperature.

Add chervil/cilantro, milk and cream and simmer 5 to 10 minutes.
Add lemon juice, nutmeg, season with salt and pepper then puree with an immersion blender until large pieces are gone.
