Crush graham crackers and combine with butter. Press into bottom of 7x11 inch pan. Set aside. Pour boiling water into blender and add gelatin. Process at low speed until gelatin is dissolved. Add lemon juice and 1 cup cottage cheese. Process at high speed until smooth. Add whipped topping and mix at low speed. Pour over graham cracker crust. Chill until set. Ready to serve in minutes. Top with pie filling if desired. Makes 6 to 8 small servings.
