1 C pearl onions, peeled
|
|
1 medium russet potato, peeled and cut into 1/4 inch cubes

1/2 C chicken broth
|
|
1/4 t fresh thyme
|
|
1 C whole milk
|
|
1 T flour
|
|
2 t horseradish
|
|
1.5 C frozen peas
|
|
1/2 C prosciutto cooked until crisp
|

Instructions |

|
In saucepan, combine onions, potato, broth, and thyme. Bring to a boil. Cover and simmer 2 minutes.
|

Blend flour into milk, then add horseradish and salt. Mix into onion mixture. Cook and stir until thick.
|
|
|
Stir in peas. Cook over medium heat until peas are heated through. Spoon onion mixture into serving bowls. Top with crispy prosciutto.
