1 lb boneless, skinless chicken breast halves, cut into 1 inch pieces
2 T soy sauce
1 large clove garlic, minced
2 T vegetable oil
1/2 c plum preserves
3 T white wine vinegar
1 lb fresh spinach
2 green onoins, thinly sliced including green tops
2 can (11 oz) mandarin oranges, drained
1 can (3 oz) chow mein noodles
Instructions
In medium bowl, combine chicken, soy sauce, and garlic. Marinate
in refrigerator for 20 minutes. In medium skillet, heat oil over
medium-high heat. Add chicken; cook until lightly browned, about
2-3 minutes.
Push chicken to side of skillet. Stir in preserves and vinegar; cook
until heated through, about 2-3 minutes.
In large bowl, combine spinach, green onions, and mandarin
oranges. Spoon chicken and hot dressing over salad; toss to
combine. Sprinkle chow mein noodles over top.
