1 pound(s) raw turkey sausage, Italian variety, cut into 2 inch pieces
1 medium green pepper(s), seeded and cut into 1-2-inch-wide strips
1 medium sweet red pepper(s), seeded and cut into 1-2-inch-wide strips
1 medium red onion(s), sliced
2 clove(s) (medium) garlic clove(s), chopped
3 4 pound(s) uncooked red potatoes, peeled and cut into 1-inch cubes
15 oz canned tomato sauce
1-2 cup(s) water
1 tsp dried oregano
Instructions
Heat 1 teaspoon of oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, turning occasionally, until browned, about 5 minutes. Transfer to a bowl and set side.
Add the remaining 1 teaspoon oil to the same skillet, then add the green and red bell peppers, the onion, and garlic. Cook over medium heat, stirring occasionally, until the peppers and onion begin to soften, about 8 minutes.
Return the sausage to the skillet. Add the potatoes, tomato sauce, water, and oregano; bring to a boil. Reduce the heat and simmer, covered, stirring occasionally, until the flavors are blended, the sausage is cooked through, and the vegetables are tender, about 25 minutes. Yields 1 1/3 cups per serving.
