In a small bowl, mix together all the spices. Remove and discard the giblets. Rub chicken inside and out with the spices. Place 1 onion into the cavity of each chicken.

Preheat oven to 250 degrees.
|
|
|
Place chickens in a roasting pan. Bake uncovered for 5 hours, or until internal temperature is 180 degrees. Let stand 10 minutes.
