Half fill wok with water, bringing to the boil. Add
carrots, and cook for 2mins
Add snow peas, and cook for a further 30sec. Drain,
refresh with cold water.Dry off
Heat wok again on medium heat until hot. Add canola.
Increase the heat to high, when hot add sesame oil,
onion and garlic. Stir-fry for 2-3mins until wilted,
and add mushrooms.
Stir-fry briefly, add carrots and snow peas. Stir-
fry for a few minutes until vegetables look bright. Stir through soy sauce, salt and bean sprouts. Serve
immediately
