Preheat oven to 350. Pound chicken breasts to half inch thickness using a meat mallet. I would recommend covering meat with Saran-wrap when pounding so chicken juices do not contaminate your counters. Usually I can cut each breast lengthwise to make 12 meat portions. Lightly salt and pepper each breast.

Place panko crumbs in a 9X9 pan. Coat both sides of chicken breast by lightly pressing meat into panko crumbs. Place a spoonful of feta cheese on the lower third of the halved chicken breast and roll to the top. Secure with a toothpick.

Place on a greased cookie sheet. Top each roll with remaining panko crumbs since alot of the crumbs fall off when you roll up the meat. Place in oven and cook for 35--40 minutes or until done. Breadcrumbs will not brown so don't over cook.

I have cut a piece of bacon in half, wrapped it around the outside of the chicken and then secured it with a toothpick and it was delicious.
