1 tsp chipotles in adobo sauce (if you cannot find use 1/2 tsp chipotle powder)
4 tbsp fresh Sage
1/4 lb of bacon
1 med onion
1 med carrot
1 stock of celery
1.5 lb of poatoes
1.5 l of beef stock (or 1.5 l of water with beef stock powder)
2-3 cloves of garlic
2 tbsp honey
Flour
Butter
1/2 tbsp summer savory
Instructions
1-Brown bacon. Remove.
2- Add beef to pan. Brown beef and add chipotle - honey. Add garlic just before beef is finished. Remove from pan.
3- Take another pan sweat onions carrots and celery in butter.
4- Deglaze beef/bacon drippings and put drippings, beef, bacon, veg and stock in one pot.
5- Add potatoes cut in 1in dice.
6- Add sage and summer savory.
7- Simmer at least 1.5 hrs.
8- Taste and add chipotle powder/honey if needed then season with salt - pepper.
9- Depending on how thick stew is / you how think you want it you may want to thicken with a roux. Heat 1-2tbsp of butter with 3-6 tbsp of flour.
Add a little at a time and wait 1-2 min to see how thick it gets.
