1 to 2 Tbs Olive Oil

2 to 3 yellow squash or zucc, cut on diagonal into 1/2 inch slices

12 oz. pasta of choice (i use mini pastas)

2 cups of spinach leaves or mixed greens

6 oz. fresh mozzarella (deli has small balls in a round plastic tub)

1 cup of grape tomatoes;halved
|

1 small onion thinly sliced
|
|
2 Tbs. Chopped basil
|

1/2 cup balsamic vinaigrette

salt & pepper to taste
