bring a large pot of water to a boil, saltit, add the pasta. while the pasta is working in the dutch oven or heavy pot, heat the olive oil, 2 turns of the pan, over med-high heat. add the pork and beef and cook 10-12 min. stire in the carrot, onion, garlic, thyme, bay leaf cocoa and cloves; season w/ salt and pepper. cook, stirring frequently for 5 min. stir int he tom paste for 1 min. then the wine, stir int he chiken stock and milt, lowevr the heat ansimmer until thickened about 5min. discard the bay leaf.
