preheat oven to 350. remove white paper skin from garlic head (do not peel or spearate the cloves) wrap garlic head andeach shallot separealy in foil. bake at 350 for 1 hr; cook 10 min. spearate clvoes; squeeze to extract garlic pult. discard skins. Place 1T butter in mcro. high 15 sec melt. rub butter over pork;sprinkly w/ 1t thyme, 1/4 t salt, 1/4 t pepper. heat large overnproof nonstik skillet over MH heat. add pork; cook 5 min. browning all sides. place pan in oven; back at 350 for 20 min. While prk stands, melt remining butter in pan over med hight heat. add shallots and garlic; saute 2 min. stirein potato; sute 2 min stir in mushrooms, reming salt, pepper; sute 2 min. stir in broth and wine; bring to boil. cover, reduce heat, simmer 6 min stir in spinach, arugula and reming thyme; cook 1 min . Serve pork over potato mixtuer.
