Chicken Noodle Soup with Vegetables

2 onions chopped
|
|
2 cups carrots, sliced
|
|
2 cups celery, sliced
|
|
10 oz frozen peas (optional)
|
|
2 tsp salt (optional)
|
|
1/4 tsp black pepper
|
|
1/2 tsp dried basil
|
|
1/4 tsp dried thyme
|
|
3 Tbsp dried parsley flakes
|
|
|
|
4 cups water (I use low sodium chicken broth)
|
|
2 1/2 - 3 lbs chicken
|
|
1 cup uncooked thin noodles
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Please all ingredients in slow cooker, except chicken and noodles.
|
|
|
Remove skin and any fat from chicken pieces. Place chicken in cooker on top of the rest of the ingredients.
|
|
|
Cover cook on high 4-6 hours. One hour before serving, remove chicken. Cool slightly. Cut meat from bones.
|
|
|
Return meat to cooker, add noodles. Cover. Cook on high for 1 hour. Serve hot.
