Melt the butter and add the sugar, baking soda, and buttermilk. Cook to softball stage, making sure to stir CONSTANTLY. This takes roughly 15-20 minutes.
Take mixture off the burner--it should be dark brown. Whip with stir spoon until cool (approx. 2 minutes)
Add vanilla and pecans. Beat/stir until it drops on wax paper. (Best way- tablespoon, scoop, drop, stick spoon in water, repeat.)
