Preheat oven to 375 degrees. Beat egg yolks, sugar and vanilla until thick and creamy.

Pour cream into saucepan and stir over low heat until almost boiling. Once ready, pour a little of the hot cream into the egg mixture and whisk briskly. Then pour the cream/egg mixture into the remainder of the cream and whisk together.

There will be a lot of foam. Skim this off. Pour the mixture into ramekins and place on baking dish. Pour hot water in the dish until it comes half way up the sides of the ramekins. Bake for 15-30 minutes (depending on size of ramekins).

They are done when they jiggle slightly, like gelatin. Let the brulees cool for 15 minutes in the hot water bath. Then remove and place in fridge to chill (at least 1 hour). Just before serving sprinkle the tops with granulated sugar and brown with propane torch.
