Preheat oven to 190C or 374F.
Beat egg whites in stand up mixer, until they form
firm peaks.
Add castor sugar 1 tbsp at a time, beating very
well between each addition.

Beat mixture until it is glossy and all sugar has dissolved.
Stir in cornflour and vinegar.
|
|
|
Shape mixture in large smooth circle (20-25cms wide)
(10cms high) on baking paper; on a flat baking tray.
Place in oven and lower temp to 150C.

Cook for 1 1/2 hours. Turn oven off and leave pav
in the oven while it cools. Take pav out of oven,
allow to cool and cover with whipped cream and
fruit. Serve ASAP.

Top with any fruit or choc. Add cocoa for choc pav OR instant coffee for coffee flavoured pav.
