Preheat oven to 350F. Spray muffin pans with non-stick spray. Whisk flours, white sugar, baking powder, baking soda, and salt unitl blended. Set aside.

In separate bowl, mix brown sugar, cranberries, nuts and lemon rind. Set aside. In separate bowl, beat eggs until lemon coloured. Add milk, lemon juice, applesauce and melted amrgarine. Pour over flour mixture and mix with electric mixer until blended and smooth. Stir in cranberry mixture making sure not to over stir. Spoon into prepared muffin pans.
