Place oven rack about 8 inches from broiler and preheat oven to 500 degrees. When temperature is reached, preheat to broil. (Caution, this recipe may set off your smoke detector).

Lightly oil a heavy metal baking pan and place fish skin-side-up (really!) and place in oven for 4-5 minutes until skin starts to brown. Meanwhile, melt butter on the stovetop in a small saucepan.

|
Flip fish and pour butter over it. Sprinkle to taste with salt, pepper, and tarragon. Broil an additional 4-5 minutes or until it is lightly browned.

|
Remove from oven and let sit 2-3 minutes to finish cooking. Spritz lightly with lime juice and sprinkle lightly with garlic powder.

Serve with Wild Rice (or Saffron Rice) and steamed Asparagus (or Broccoli).
