1/2 C. Honey or Sugar, plus 1 Tblsp to proof yeast
3 Eggs, beaten
3/4 tsp Salt
5 to 6 C. Flour
Instructions
Dissolve yeast with one tablespoon of sugar in warm water.
Microwave butter until melted and add to milk. This will incorporate the butter with the milk and still leave the mixture warm for the yeast.
Add honey, then yeast mixture. Add beaten eggs and salt. Mix. Add flour and knead about 10 minutes. Dough should be tacky not sticky, but make a nice ball. Let rise until double in size.
Divide dough into two and roll into large rectangle. Cut dough in half length wise, then into even strips depending on the size you'd like your rolls. Roll up tight and pinch ends. Rise again until double in size.
Bake at 350 degrees for 15-20 minutes.
To freeze rolls for later use, roll up dough and then freeze on baking sheet. Once frozen, you can remove from baking sheet and put in a freezer bag. Set them out to rise as usual and bake.
