Heat Olive oil & butter and add onions. Cook for about 10-20 minutes ( Covered in pot)

uncover pot and simmer to brown onions ( takes awhile) - Have a glass of wine while you wait...-) Wasn't that what Julia Child did ...

Add garlic , sprinkle flour and stir up & add wine - simmer for three minutes. In a seperate pot bring stock to a boil and then add to the soup pot & cook for at least 10 minutes & add salt/pepper to taste

Pour soup into soup bowls with toasted crusty bread slices on top & shredded cheese. Broil under broiler until cheese browns and serve
